These cookies are delicious... with the addition of fresh rosemary they make such a comforting cookie to enjoy. They are sweet, salty and aromatic, don't eat them all at once!
Ingredients:
3 Tbsp finely chopped rosemary (fresh)
1/3 cup Butter (melted)
6 Tbsp Honey
1 egg
3/4 cup Almond meal
1 & 3/4 cup Oat flour
1/2 tsp Baking soda
2 tsp Vanilla extract
1 tsp Sea salt
1/2 cup chopped dark chocolate
Note:
Oat flour can be made from whole-grain or rolled oats whizzed in a blender to form a flour. Almond meal can be made in the same way using whole natural almonds.
Method:
Mix dry ingredients in a bowl
Mix wet ingredients into a separate bowl and whisk for 2 minutes
Add wet to dry ingredients
Fold in the chopped rosemary and chocolate chunks
Pre-heat oven to 180 degrees and line a tray with baking paper
Spoon small balls onto tray, then flatten gently
Sprinkle with sea salt flakes
Bake for 10 -15 minutes until golden (depending on your oven)
Remove from oven and allow to cool for 10 minutes
