Salty Chocolate Stuffed Dates

These are a nutritious treat. Dates are high in minerals like potassium, magnesium, copper and iron & brazil nuts are a selenium powerhouse, which is important for our thyroid. Then we have nut butter for healthy fats and satiation & dark chocolate for a mood lift. Enjoy, they are amazing!

Recipe: 

Ingredients:
8 medjool dates
8 brazil nuts
8 tsp nut butter (I used almond butter)
100g dark chocolate (I used 78%)
1 tsp coconut oil
Sea salt

Method:
1. Slice open dates & remove pip
2. Spoon in nut butter of choice
3. Add a brazil nut into the date
4. Melt dark chocolate & coconut oil together
5. Cover the dates in chocolate then set in fridge.
