Carrots get their vibrant orange colour from beta-carotene, a plant pigment that your body converts into vitamin A as needed. Vitamin A is an essential nutrient that plays a key role in supporting your health, especially during the postpartum period.
While iron often gets the spotlight, vitamin A is just as important because it helps your body access and mobilise stored iron, supporting healthy red blood cell production. It also plays a vital role in tissue repair and healing, supports a healthy immune system, and contributes to healthy skin and vision.
Vitamin A is one of those nutrients that is often overlooked, yet it can make a meaningful difference in recovery and overall wellbeing, particularly if you're healing after birth or feeling run down.
Ingredients
Base:
1 cup dried dates (soaked in boiling water for 10mins)
1 cup walnuts
1 packed cup grated carrot
1/2 cup rolled oats
2 Tbsp ground flaxseed
1/2 tsp cinnamon
Pinch of salt
Icing (2 versions):
4-5 Tbsp hulled tahini
2 Tbsp melted coconut oil
1 Tbsp maple syrup
or
100g melted white chocolate
2 Tbsp melted coconut oil
Method
Add all of base ingredients to a food processor and blitz until the mix sticks together. Place into a loaf tin.
Mix together the icing ingredients, then spread over top. Sprinkle over chopped walnuts. Then freeze for 1 hour before cutting.
Store in refrigerator and enjoy as you please!!
I was taken back how YUM this is, I don't often make 'carrot cake' type treats or snacks, I'm more of a chocolate & caramel person - but this is seriously good.
